This bean dip is far superior than any bean dip I have ever tried. Feel free to play around with the amount of chipotle you use. Some days I want a mild bean dip, so this is the exact recipe I use. Other times, I want some spice so I will add more chipotle, maybe some cayenne and even some finely chopped jalapenos!
27oz pinto beans, drained
2 cups cheddar cheese
8oz cream cheese, softened
1/2 cup plain Greek yogurt (optional if you want a little tang)
3 TBSP milk
1 1/2 TBSP cilantro
2 tsp paprika
1- 1/2 tsp salt
1/2 to 1 tsp chipotle (depending on how spicy you want it)
1 tsp tarragon
3/4 tsp cumin
1/2 tsp oregano
1/4 tsp black pepper
Drain beans and mash in a large bowl.
Add all other ingredients except for cheddar cheese and mix well with an electric mixer.
Fold in cheddar cheese.
Serve hot or cold with corn chips or tortilla chips.
