Beef Sausage and Potato Soup

With the temperatures still below freezing during the day and everything covered in a couple inches of ice, this is one of the perfect meals to fix!

Beef Sausage and Potato Soup

1 pound beef stew meat (cut into small pieces)

1 pound ground sausage

2 TBSP safflower oil

8 yellow potatoes

6 medium carrots

5 celery stalks

1 large tomato

6 cups filtered water

1/2 cup tomato puree

1 TBSP parsley

2 tsp oregano

2 tsp mineral salt

1/2 tsp black pepper

1/4 tsp ground rosemary

1/4 tsp ground sage

1/4 tsp ground thyme


Brown beef and sausage in pan with 2 TBSP safflower oil.

Scrub and chop carrots, celery, potatoes, and tomato into bite size pieces, add to large pot along with water, seasonings, and tomato puree.

Begin cooking on medium high heat.

Once meat is browned, add meat and oil to the pot and continue boiling until potatoes are soft when pierced with a fork.
