Banana Bread Batter
3/4 cup butter, softened
2 cups sugar
1/4 cup milk
4-6 medium bananas, mashed
3 cups flour
3 TBSP ground flax seeds + 1/8 tsp baking powder + 9 TBSP warm water
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
16 oz (2 packages) cream cheese
1/4 cup sugar
1/2 tsp vanilla
2 TBSP flour
In small bowl, cream together cream cheese, 1/3 cup sugar, vanilla and 2TBSP flour. Set aside.
In large bowl cream together butter and sugar. Then add 1/4 cup of the cheesecake filling and beat on medium high until fluffy.
Mix in milk, flax seed mixture, and bananas.
Add flour to the top of the mix and sprinkle baking powder, baking soda, and salt evenly over the top of the flour.
Beat on slow speed until flour is moistened. Then beat on medium until everything is mixed well.
Spread half the batter into two loaf pans.
Spread half the cheesecake filling into the center of both pans, trying to stay away from the sides.
Spread remaining banana bread batter on top and smooth evenly.
Bake at 350 for about 60-65 minutes, or until a wooden toothpick inserted in the middle comes out clean.
