Cinnamon Cake with Cream Cheese Icing











I love anything with cinnamon and the cream cheese icing just makes it even better!

2- 1/2 cups flour

2 cups turbinado sugar

1 TBSP baking powder

2 TBSP cinnamon

1/2 tsp salt

2 TBSP ground flax seed + 1/8 tsp baking powder + 6 TBSP hot water

1 1/2 cup milk

1/2 cup oil or melted butter

butter to grease the baking dish

In small bowl mix together the ground flax seed, 1/8 tsp baking powder and hot water. Let set while you prepare the rest of the ingredients, stirring occasionally until it is the consistency of beaten eggs.

Butter and flour a 9 x 13 glass baking dish.

Whisk together flour, sugar, baking powder, cinnamon, salt in a large bowl.

Add the flax seed mixture, milk, and oil (or melted butter) and mix on medium speed for about 2 minutes.

Pour into greased and floured dish and bake at 350 degrees for about 44 minutes.

Cool for 20 minutes and spread icing on top.


Cream Cheese Icing

8 ounces Cream cheese (not lowfat)

4 TBSP milk

1- 1/2 cups powder sugar

Mix until smooth. It’s not meant to be thick like regular frosting so it will be slightly runny.
