Cream Cheese Avocado Dip

Don’t confuse this dip with guacamole, it is far superior. This is a lighter, more refreshing dip with a slightly stronger lime flavor to it. It was actually made by accident when I was trying to duplicate guacamole without garlic or onions in it so my son could also enjoy something other than plain tortilla chips. I think I actually like this even better!

Avocado Dip

3 ripe avocados

1 lime

2 large ripe tomatoes, diced

8oz cream cheese, softened

4oz plain Greek yogurt

3 TBSP milk

1- 1/2 TBSP cilantro

1/2 tsp chipotle

1/2 tsp sea salt

1/2 tsp black pepper

Beat together cream cheese, yogurt, and milk in medium mixing bowl.

Mix in cilantro, sea salt, chipotle, and black pepper.

In separate bowl, mash avocado.

Squeeze lime over mashed avocado and mix well.*

Add to cream cheese mixture and beat until mixed thoroughly.

Stir in diced tomatoes.

Serve chilled with tortilla chips.

Store leftover in a container with plastic wrap pushed down on top of dip so no air touches the dip. Air is what causes the avocado to turn brown. Although it’s fine to eat the browned dip, it doesn’t look very appetizing.

*Tip for limes:

Roll limes in hands or on counter-top to loosen the juices and you will get a lot more juice. Also use a lemon squeezer to get the maximum amount of juice.

I actually made this the other night and it was fabulous! I don’t like guacamole very much because it always has a weird taste to it. Maybe it’s from all the garlic and onions that is always in it, but your cream cheese avocado dip is perfect. I love that I can taste more of the avocado and I like more lime in mine too so I saved some lime and squeezed the juice in my Part of it. I will definitely be making this for our bbq’s this summer! Thank you thank you thank you!
