I didn’t think I cold love sausage any more until I started making my own. Now I am hooked. I had to go back the next day and buy some more ground pork just so I could try making different flavors. This is a sweet maple and brown sugar sausage with a slightly spicy note which balances the sweetness exceptionally well.
This is just my second attempt at making it so I stuck with the same base ingredients that’s in the Mild Breakfast Sausage that I made. There are endless flavors to be made. I think the guy behind the meat counter will be seeing a lot of me in the coming weeks. haha!
2 pounds ground pork
1/4 cup turbinado or light brown sugar
1/4 cup real maple syrup
2 tsp dried parsley
1-1/2 tsp salt
1 tsp black pepper
1/2 tsp thyme
1/4 tsp ground sage
1/4 tsp crushed red pepper
1/8 tsp ground rosemary (or 1/4 tsp crushed rosemary)
1/8 tsp ground nutmeg
Mix all ingredients together in bowl.
Form into patties and cook on medium heat for 5-7 minutes per side.
Make sure the patties are cooked thoroughly and no pink remains inside.
