The cold season has hit here hard over the last couple days and I didn’t have the ingredients to make homemade chicken noodle soup but there are other soups that are just as good, if not even better at helping to combat those nasty germs. This Potato, Cabbage and Beef Soup is one of those soups that are high in vitamin C to help build the immune system back up. The potassium and magnesium, and mineral salt in the broth help the body stay hydrated as well and that is one of the most important things to do when you’re sick.
10-12 cups filtered water
1 medium head of cabbage
10 gold potatoes
1-2 pounds ground beef
1/2 stick butter
1 TBSP mineral salt
1 TBSP parsley flakes
2 tsp dried oregano
2 tsp basil
1-2 tsp black pepper
1/2 tsp ground rosemary
In large pot, brown the ground beef, drain most of the grease, but keep some for flavor.
Chop cabbage into bite size pieces and add to pot along with the water. Boil for about 10 minutes with lid partially on.
Scrub potatoes, remove any eyes or dark spots and cube into bite size pieces.
Add potatoes and all the other ingredients to pot.
Boil for about 20 minutes, or until potatoes are soft when pierced with a fork.
