Vanilla Cinnamon Fry Bread

The fun thing about cooking is, it doesn’t always have to be exact. You can get in the kitchen and throw some ingredients together and have fun experimenting. My boys and I were getting hungry, it was after 2 in the morning and since I’ve neglected to go grocery shopping lately, we were at the mercy of whatever we could find in the kitchen. 

Spontaneous Vanilla Cinnamon Fry Bread

A quick peek in the pantry is all it took to decide on this sweet treat. I decided what to add as I went along. With the basic understanding that flour mixed with sugar makes something sweet and I needed to add some baking powder to get it to rise a little, I began adding ingredients and eventually came out with this. My boys were eating them almost as fast as I could scoop them out of the pan. These amazing mini sweet fry breads are crispy on the outside and moist in the middle and have just a hint of vanilla with the perfect amount of cinnamon in them.

 

2 cups flour

1 cup sugar

1/4 cup safflower oil

2 teaspoons cinnamon

1-2 teaspoons baking powder

1 teaspoon vanilla

dash of salt

safflower oil for frying

1-1/2 cups milk

 

In large bowl, mix together flour, sugar, cinnamon, baking powder, salt.

Add safflower oil, vanilla and milk then stir.

You can add a little more milk if it is too thick, but don’t make it thin.

Pour into a pan that has been heated with about 1/4 inch of safflower oil.

Fry for about 2-3 minutes or until bottom is golden brown; flip and repeat.

Lay on paper towels to absorb the excess oil.

You can serve these with real maple syrup or honey, but they are delicious by themselves!

These were the last few I had to make. I was running low on the oil in the pan, but didn't want to add more and they still turned out crispy. yummmmm
